Herb-Crusted Chicken with Roasted Asparagus & Lemon Couscous

Herb-crusted chicken, a cherished favorite in rustic European cuisine, is celebrated for its simplicity, rich flavors, and heartwarming appeal. Ingredients:

For the herb-crusted chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tsp Dijon mustard
  • 1/2 cup breadcrumbs (panko works great)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

 

For the lemon couscous:

  • 1 cup couscous
  • 1 1/4 cup vegetable broth or water
  • Zest & juice of 1 lemon
  • 1 tbsp olive oil
  • Chopped parsley (optional)

 

For the roasted asparagus:

  • 1 bunch of asparagus, trimmed
  • 1 tbsp olive oil
  • Salt & pepper
  • Shaved parmesan (optional)

 

Instructions:

1. Prepare the chicken:

Preheat oven to 400°F (200°C). Mix breadcrumbs, herbs, salt, and pepper.
Brush chicken with olive oil and mustard, then press into breadcrumb mix.
Place on a baking sheet and bake for 20–25 minutes, or until cooked through. Minimum internal temperature 165°F (74°C)

2. Roast the asparagus:

Toss asparagus with olive oil, salt, and pepper. Roast alongside the
chicken for 12–15 minutes until tender and slightly crisp.

3. Make the couscous:

Bring broth to a boil. Stir in couscous, remove from heat, and cover for 5 minutes. Fluff with a fork, then mix in lemon zest, juice, and olive oil.
Add chopped parsley if desired.
